Agro reduces fresh Kittitian pink guava with cane sugar over a slow flame until the fruit pulls away from the pot in sheets. The patient version of the sweet that every island grandmother once made on Sunday afternoons. Dense, sticky, a little tart at the finish. Slices cleanly with a hot knife.
200g block. Pairs with sharp cheddar, strong coffee, a small glass of dark rum. The cheese-board fixture.
