Brinley Gold Shipwreck Coconut Rum

Real St Kitts coconuts on aged rum. No suntan-lotion finish, the way the cheap ones go.

Fresh-pressed island coconut infused into four-year-aged Caribbean rum, no shortcut. The Beverage Tasting Institute scored it 91, the highest it has ever given a flavoured rum.

Painkiller. 60ml coconut rum, 100ml fresh pineapple juice, 25ml orange, 25ml coconut cream. Shake hard with crushed ice, pour unstrained, heavy nutmeg grated on top. This is the test: built with a synthetic coconut it reads as suntan oil. With this one it doesn't.

Pina colada. 60ml coconut rum, 90ml pineapple juice, 30ml coconut cream, 12ml lime. Blend with a cup of crushed ice, tall glass, pineapple wedge.
