Brinley Gold Shipwreck Lime Rum

Real lime on a lighter rum. A daiquiri already in the bottle: add ice and a wedge.

Fresh lime infused into a lighter, less-aged Caribbean rum on St Kitts, sweetened just enough, no green colouring. Wine Enthusiast 88.

Daiquiri, the lazy version. 60ml lime rum, 25ml fresh lime, 10ml simple syrup. Shake hard, double-strain into a cold coupe. The fresh lime is not optional; the rum's own lime is bright, but it is not acid.

Mojito. Six mint leaves and 15ml fresh lime lightly muddled, 50ml lime rum, ice, top with soda, stir once. A sprig on top.
