A Bellyful house jam, made in St Kitts from mango picked at full sweetness off the Nevis trees, cooked down with cane sugar and a squeeze of lime to hold the colour and cut the sugar. Where the chutney catches the fruit green and savoury, this one waits for the ripe glut in July and sets it soft. A maker collaboration, put up in small batches the way a Nevisian kitchen would.

Loose-set, not stiff. The lime keeps it from going cloying.
