Ebang cooks brown sugar, condensed milk, and butter together until the syrup pulls a thread between two fingers, then beats it by hand until it loses its gloss and turns soft. Six squares to a tin, each one cleanly cut. The traditional preparation: no chocolate, no flourishes, just sugar and milk and patience.
