Hibiscus Spirits run their public masterclass out of Spice Mill on Cockleshell Beach. The class talks rum-making in plain terms: fermentation, distillation, ageing, the choices behind a sorrel infusion and a vapour-infused gin. Then sits everyone down to drink and eat through the proof of the lesson.

What you learn

Where rum sits in the wider spirits family. Why pot still and column still produce different rums. What the Roselle hibiscus calyx, the flower most Kittitians know as sorrel, does to a spirit that vanilla does not. Why the Island Spiced Gin is vapour-infused rather than macerated. The decisions Hibiscus Spirits made when they set up the line, and the decisions they are still making.

What you eat and drink

The Spice Mill kitchen pairs each of the three Hibiscus Spirits bottles to a course built around it. The bartender pairs each to a cocktail. The lesson moves between the table and the bar. The view, on a clear evening, is Nevis across the channel.
