{"type"=>"root", "children"=>[{"type"=>"paragraph", "children"=>[{"type"=>"text", "value"=>"Caribbean gin usually goes one of two ways: it starts as a flavoured liqueur and calls itself a gin, or it starts as a gin and earns the Caribbean part. Hibiscus Spirits took the second route. The spirit is vapour-infused, passing through the botanical basket as vapour in the still so it picks up the aromatics without the heavier extracts: juniper anchor first, then allspice, lemongrass, fresh ginger, and the sorrel calyx."}]}, {"type"=>"paragraph", "children"=>[{"type"=>"text", "value"=>"It is the line's cross-category piece, the bottle that argues a Caribbean gin can sit next to a London Dry on a serious bar rather than beside a beach-bar liqueur."}]}]}
How it tastes

The nose is juniper, dry citrus, soft ginger, the sorrel as a faint tart-floral lift. The palate holds a clean juniper anchor, with allspice and ginger surfacing in the middle and the hibiscus carrying a soft dry tartness on the back. The finish is long and aromatic; the ginger stays. Vapour-infused, so the Caribbean botanicals sit in the aroma rather than the body.

Hi Biscus

COCKLESHELL BAY (SPICE MILL), ST. KITTS

Roger Brisbane's sorrel-infused rum and gin. Distilled at Spice Mill on Cockleshell Bay. Part of the Kittitian RumMaster Programme.

We marvelled at the sugar plantations growing up. Now we're putting them back to work, one sorrel flower at a time.
