How it tastes

Deep ruby-amber, the colour fully from the sorrel. The nose is allspice and cinnamon up front, sorrel behind it, dried and a little tart, with a small lift of vanilla that never turns sticky. The palate is warm, dry, layered: the sorrel carries a soft tartness through the middle and the spices land last. The finish is dry and floral, longer than most spiced rums in this price.

Hi Biscus

COCKLESHELL BAY (SPICE MILL), ST. KITTS

Roger Brisbane's sorrel-infused rum and gin. Distilled at Spice Mill on Cockleshell Bay. Part of the Kittitian RumMaster Programme.

We marvelled at the sugar plantations growing up. Now we're putting them back to work, one sorrel flower at a time.
